What temperature are you getting, the best I can find is it should be between 87 and 94C. On mine it has never gone above half way and is normally around 5mm left of that. Have you tried checking the actual temperature at the sensor with a lazer thermometer and checking the ECU reported temp with a Hawkeye or similar, it may be the gauge.
Also what mix of coolant do you have, coolant is more effective at transferring heat than water, so if you have a strong mix it could impact. I run 50/50 with distilled water, not tap water.
I have recently fitted an electric fan, it never comes on and I will fit a radiator cover and the engine cover before winter.
